BUS 159 - Bakery ll: Classical Cakes and Tortes3
Course Description: This practical course is designed to teach the techniques, procedures and knowledge required for the preparation of classical cakes and tortes. The course will include the use of bakery equipment and techniques, and the importance of sanitation and safety practices in bakery production. Students will explore basic puff pastry, cream and mousse production, and cake and torte recipes. Prerequisite(s): Successful completion of BUS 157 Note(s): This course will have a fee attached for culinary supplies.
