EDU 154 - Health, Safety, and Nutrition In Early Childhood Education


Course Description: An examination of the objectives, concerns, and dynamics of health, nutrition and safety in relationship to the development of the infant, toddler, and preschooler with an emphasis on identifying potential problem areas in childcare settings, including child abuse and neglect. Topics include Massachusetts Department of Early Education and Care Standards, universal precautions, creation of safe environment, as well as the prevention, identification, and treatment of infectious diseases. First aid techniques appropriate for childcare are included.
Prerequisite(s): Completion of PSY 122.

Course Student Learning Outcomes:
  • Conduct a safety check of an indoor or outdoor learning environment, using the MA EEC Licensing Requirements, and evaluate what changes need to be made to the indoor and outdoor environments to meet the square foot ratio and teacher to child ratio requirements.
  • Complete a national certification/testing program in Child and Infant CPR and First Aid, show your proof of certification to your instructor and explain if you are now able to be alone with a group of children and why CPR and First Aid is considered personal and professional development.
  • Design and present to the class a Health, Safety, or Nutrition Lesson Plan using the ECE Departmental Lesson Plan guidelines.
  • Research the signs and symptoms of child abuse and neglect, analyze a case study to determine if a 51A filing is necessary and defend the decision based on established 51A criteria, demonstrate how a moral and social responsibility to protect children and relevance of mandated reporter law is applied.
